French Toast Muffins or Casserole
- 5 bagels (I usually use cinnamon raisin, or pumpkin, or French Toast)
- 1.5 - 2 cups milk (have not tried this dairy free, but a different milk could work)
- 5 eggs (Liquid Egg could be a good egg replacement)
- approx. 1 tablespoon sugar
- approx. 1 tablespoon cinnamon
- Preheat oven to 350 degrees
- Grease a muffin pan or 9x13 casserole dish
- Slice and cut bagels into small cubes and put in large bowl
- In separate bowl, add eggs, milk (I start with 1.5 cups and add a little more later if needed), and cinnamon
- Pour egg/milk/cinnamon mixture over bagel cubes and mix until cubes are coated. You can let the mixture sit for a few minutes.
- Add mixture to muffin pan or dish; bake for 20-25 minutes (muffins take about 20 minutes and a casserole takes a little longer)
My kids love these and eat them for breakfast before school!
Pizza Bagels
This one is super easy and only needs a few ingredients!
Top plain bagels with pizza sauce and cheese. Add any toppings your family likes, and bake for about 10 minutes at 350 degrees.
