2 Bagel Recipes to Make Your Breakfast (and Dinner) Easier

Do you find yourself with an untouched package of bagels at the end of the week? Or maybe you're looking to switch up Friday night pizza? Then check out these two bagel recipes every busy mom needs!

French Toast Muffins or Casserole

  • 5 bagels (I usually use cinnamon raisin, or pumpkin, or French Toast)
  • 1.5 - 2 cups milk (have not tried this dairy free, but a different milk could work)
  • 5 eggs (Liquid Egg could be a good egg replacement)
  • approx. 1 tablespoon sugar
  • approx. 1 tablespoon cinnamon
  1. Preheat oven to 350 degrees
  2. Grease a muffin pan or 9x13 casserole dish
  3. Slice and cut bagels into small cubes and put in large bowl
  4. In separate bowl, add eggs, milk (I start with 1.5 cups and add a little more later if needed), and cinnamon
  5. Pour egg/milk/cinnamon mixture over bagel cubes and mix until cubes are coated. You can let the mixture sit for a few minutes.
  6. Add mixture to muffin pan or dish; bake for 20-25 minutes (muffins take about 20 minutes and a casserole takes a little longer)

My kids love these and eat them for breakfast before school!

Pizza Bagels

This one is super easy and only needs a few ingredients!

Top plain bagels with pizza sauce and cheese. Add any toppings your family likes, and bake for about 10 minutes at 350 degrees.
