Fall Turkey Chili Recipe

Nothing says fall like cooler temps, falling leaves, football Sundays…and chili!

INGREDIENTS

  • 1 TBSP oil of your choice
  • 1 lb. ground turkey
  • 1 onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 3 garlic cloves, chopped
  • 1 (14 1/2 oz) can diced tomatoes
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 2 cups water*
  • 1 cup low-sodium vegetable broth
  • 1 TBSP chili powder
  • 1 tsp each of cumin, oregano, coriander and red chili flakes

*Add more or less water depending on desired thickness.

DIRECTIONS

  1. Cook ground turkey in a nonstick pan over medium heat. Try not to cook until it is fully done - you will want that to happen in step #5.
  2. Heat oil in a medium-sized pot.
  3. Add onion, pepper, and garlic and saute until soft.
  4. Add turkey, tomatoes, and the remaining ingredients. Bring to a boil.
  5. Lower heat, cover, and simmer for 1 hour, adjusting seasoning as desired.
