Nothing says fall like cooler temps, falling leaves, football Sundays…and chili!

INGREDIENTS
- 1 TBSP oil of your choice
- 1 lb. ground turkey
- 1 onion, chopped
- 1 red bell pepper, seeded and chopped
- 3 garlic cloves, chopped
- 1 (14 1/2 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained and rinsed
- 2 cups water*
- 1 cup low-sodium vegetable broth
- 1 TBSP chili powder
- 1 tsp each of cumin, oregano, coriander and red chili flakes
*Add more or less water depending on desired thickness.
DIRECTIONS
- Cook ground turkey in a nonstick pan over medium heat. Try not to cook until it is fully done - you will want that to happen in step #5.
- Heat oil in a medium-sized pot.
- Add onion, pepper, and garlic and saute until soft.
- Add turkey, tomatoes, and the remaining ingredients. Bring to a boil.
- Lower heat, cover, and simmer for 1 hour, adjusting seasoning as desired.
